Chocolate Protein Cookies
Gluten free, refined sugar-free, low-glycemic, heart-healthy, high protein, Paleo This is my high protein version of a chocolate chip cookie that is quick and easy. I combined almond butter and protein powder making them chockfull of protein. Then I used strong, hot coffee to give them a high-energy hit. Together with the low-glycemic carbs from chocolate and coconut sugar these cookies provide me long-lasting fuel for tough workouts. Pack these for your outings as a healthy treat that tastes delicious.

  1. Preheat oven to 350ºF/180ºC. Prepare 2 cookie sheets lined with parchment paper or sprayed with coconut
  2. 20 Cookies
Recipe Notes

1. In a large bowl, using a hand mixer, blend coconut sugar and eggs until smooth.
2. Add almond butter, coffee and vanilla. Blend 2 minutes into a creamy cookie dough.
3. Add protein powder, cacao powder, baking powder and salt. Stir to combine. Fold in chocolate chips.
4. Form dough into 20 cookies.
5. Place onto prepared baking sheets spaced ½ inch (1,5 cm) apart and sprinkle tops with large crystal salt.

6. Bake 10 minutes. Let cool completely before handling.
